 Tzatziki
 
 
tzatziki, a very simple sauce, is a great accompaniment to traditional Greek dihses and it can also be used as dip, as filling for baked potatoes, or served with fish fingers, to cite a few examples.
 
1 cup    yogurt, plain, better Greekstyle yogurt  
3/4 cup    cucumber, diced  
1 Tbs    fresh dill leaves, or 2 tsp dried  
1 Tbs    extra virgin olive oil  
2 cloves    garlic, crushed (optional)  
  salt and pepper to taste  
 
1 Mix yogurt, olive oil, garlic, if used, salt and pepper. Stir or use a standing blender.
2 Add dill and cucumber. Stir to mix well. Serve or chill in the refrigerator.
