mustard |

Mix the turkey meat, half the butter, the mustard and the port in a blender or food processor until it makes a very coarse puree. Season to taste. Distribute into four individual dishes. |

Melt the other half of the butter and pour it on top of the potted turkey. Chill for 1 hour or until required. |
