| French STYLE Peas RECIPE |

| in some cases, we bow to convenience. Frozen peas is one of them. We love fresh peas on the pod. We use them while in season and we can find them in the stores; this is not very often. We use organic frozen peas most of the time. |

tarragon or 1 tbsp chopped tarragon |

| 1/4 tsp |

Wash lettuce leaves well and shake dry, cut in wide stripes. Peel onions and halve. |

Boil 3/4 cup of water in a pan with the salt. Add onions an lettuce leaves, cover and simmer for 10 minutes. Add frozen peas. Bring back to boil and simmer for a further 10 minutes, or until water is absorbed and peas tender. |

Drain. Discard tarragon sprig, if used. Transfer to a warm serving tray and sprinkle with water. |
