This is a Tunisian salad. Use your favorite cheese instead of halloumi.
 
2   thick slices of bread, oven toasted and cubed  
1 tbs    lemon juice  
2   green peppers, diced  
2   large tomatoes, quartered  
3   spring onion, chopped  
1/2 cup    halloumi cheese, or feta cheese, cubed  
 
1/2 cup    black and green olives, stoned  
1 (8 oz)    can of tuna  
4 tbs    extra virgin olive oil  
2 cloves    garlic, crushed  
2 tsp    crushed coriander seed  
1 drop    harissa (chili sauce) or 3 drops Tabasco  
 
1 Preheat the oven at 400° F (200° C), drizzle a little olive oil and 1 tsp lemon juice over the bread slices and toast in the oven for 10 minutes.
2 Cube the bread and sprinkle with 2 tsp lemon diluted in 2 tbsp water. Place it in a salad bowl. Add peppers, tomatoes, green onions, cheese, olives, and tuna. Season to taste and let it rest.
3 Heat the olive oil in a pan, add garlic, crushed coriander and harissa. Cook for a couple of minutes. The garlic will start to color. Add the remaining lemon juice, stir, and pour this dressing over the salad.
4 Let the flavors soak for at least an hour before serving.
