| Caramelized garlic |

| Caramelized garlic is very simple to make. You can use this condiment with roasted meats or poultry as well as your roasted corn. |

Vermouth |

fresh, peeled, garlic cloves |

Blanch garlic in boiling water for about two minutes. Remove with a slotted spoon or ladle and place in a bowl of cold water {to stop the cooking}. Remove cloves from the water and drain on layers of paper towels. |

Place the sugar in a small, heavy {cast iron} skillet and add 2 tablespoons of the vermouth. Heat on a medium heat. Cook until the mixture turns a golden color, swirling the mixture by tipping the pan to insure even cooking. Adding water 1 tablespoon at a time, swirling the pan to incorporate the liquid. Toss in the garlic and cook until well coated and the garlic is soft but still keeps it's shape. |
