Garlic Mushrooms on Toast Recipe

1 Tbs butter
2 tsp vegetable oil
2 oz open cup mushrooms
1 garlic clove, finely chopped
4 fl oz oz white wine
2 Tbs double cream
1 Tbs parsley, chopped
2 slices bread, thick sliced
olive oil, for drizzling
Methods/steps
1 Place the butter and oil together into a small frying pan. When butter just foams, add the mushrooms and the garlic. Sauté for 2-3 minutes.
2 Pour in the white wine and reduce for 1 -2 full minutes.
3 Combine with the cream. Sprinkle with parsley to finish.
4 Heat a griddle or heavy skillet. Toast the slices of bread, drizzling with the olive oil, until you achieve a nice golden color.
5 Top the toast with the garlic and mushroom mixture.
