Blueberry Cake

Description

Excellent and nutritious as breakfast, dessert or snack, and a change from blueberry pancakes.

1 cup blueberries
4 Tbs all purpose flour
6 Tbs granulated sugar
4 eggs
2 cups milk
1/2 Tbs butter
Methods/steps
1 Preheat oven to 350° F. Rub base and sides of a 6 cups pie dish. Wash and drain blackberries, discarding spoiled.
2 Beat eggs and sugar until fluffy. Sift flour and add to the egg mix. Blend well. Transfer to prepared dish.
3 Cover with foil and bake in the center of the oven for 1 hour, or until stick inserted into center of cake comes out clean.
4 Serve warm or cold in the same dish.
Additional Tips

Using frozen blueberries, this cake is for all seasons.
