Leeks and Bacon au Gratin

  • 6-8 leeks, trimmed and washed well
  • 8 slices Canadian bacon, cooked, or thin slices of ham

Sauce

  • 2 Tbs butter
  • 1 Tbs flour
  • 1 tsp mustard
  • 2 cups milk
  • 4-5 Tbs grated cheese
  • salt & pepper to taste
Methods/steps

Cheese sauce

  1. Melt the butter over a medium heat. Stir in flour and mustard. Cook for 1-2 minutes.
  2. Gradually, pour in the milk, stirring frequently, and cook until the liquid starts boiling.
  3. Remove from heat and mix in 3 Tbs grated cheese. Season to taste.

Leek and bacon bake

  1. Cut leeks into 6-inch chunks and cook in salted boiling water until tender. Drain well.
  2. Preheat oven to 350° F (180° C).
  3. Wrap a piece of bacon around each leek and place into a greased ovenproof pan.
  4. Pour sauce over leeks and bacon and sprinkle 1-2 Tbs grated cheese on top.
  5. Bake for 25-30 minutes. Serve warm.
