6-8 leeks, trimmed and washed well 8 slices Canadian bacon, cooked, or thin slices of ham Sauce
2 Tbs butter 1 Tbs flour 1 tsp mustard 2 cups milk 4-5 Tbs grated cheese salt & pepper to taste
Methods/steps
Cheese sauce
Melt the butter over a medium heat. Stir in flour and mustard. Cook for 1-2 minutes. Gradually, pour in the milk, stirring frequently, and cook until the liquid starts boiling. Remove from heat and mix in 3 Tbs grated cheese. Season to taste. Leek and bacon bake
Cut leeks into 6-inch chunks and cook in salted boiling water until tender. Drain well. Preheat oven to 350° F (180° C). Wrap a piece of bacon around each leek and place into a greased ovenproof pan. Pour sauce over leeks and bacon and sprinkle 1-2 Tbs grated cheese on top. Bake for 25-30 minutes. Serve warm.
