Shortcrust pastry

Use ready to roll pastry or make your own shortcrust pastry.

  • 1/2 cup + 1 Tbs flour
  • pinch of salt
  • 3 Tbs butter
  • 1-2 Tbs chilled water.

Filling

  • 1 large egg, beaten
  • 1/2 cup single cream
  • 1/4 cup grated cheese
  • 4 spring onions, finely chopped
  • salt
  • pepper
Methods/steps

Follow the instructions for plain pastry to prepare shortcrust pastry. There is no need for any blind baking.

  1. Preheat oven to 350 F (180 C)
  2. Roll out the pastry and line 12 individual pie pans. Chill while preparing the filling.
  3. Whisk together cream and egg. Season with salt and pepper, then mix in cheese and spring onions.
  4. Pour the filling into the pastry shells and bake for 20-25 minutes, until the filling is just set.
Additional Tips

As a variation, top each pie with a slice of tomato before baking.

Although it can be served warm or cold, it is best eaten warm or slightly re-heated.
