Basic Vinaigrette

Description

Basic vinaigrette is prepared using only vinegar, oil (usually 1 tbs vinegar to 3 tbs oil), salt, and pepper. This recipe calls for a milder flavor. For the variations suggested, prepare first the basic vinaigrette, mixing the other ingredients afterwards.

  • 1 Tbs white wine vinegar
  • 1 Tbs water
  • 4 Tbs olive oil
  • 1 tsp salt
  • 1 tsp sugar
  • pepper to taste

  1. Pour the vinegar into a small bowl.
  2. Add water, salt, sugar, and pepper. Mix with a fork.
  3. Add the oil and beat until the mixture is emulsified.

Additional Tips

Flavor changes drastically if you use a specialty vinegar. Try to prepare a basic vinaigrette using red wine vinegar, balsamic vinegar, cider vinegar, rice vinegar or herb flavored vinegar.

A dash of hot sauce, like Tabasco.

2 tsp chopped fresh aromatic herbs, like parsley, chives, tarragon, basil, perifollo.

1 tsp dried herbs, like basil or marjoram.

½ tsp crushed garlic.

½ hard boiled egg, yolk crushed and mixed into the dressing, egg white chopped.

Prepare double quantity of basic vinaigrette and add 2 tbs chopped onion, 1 tbs chopped fresh parsley, 2 tbs finely diced green pepper.

Try over seafood salad.

Flavor improves if kept in the fridge for a couple of hours.
