  • 1 celeriac, peeled and diced
  • 1 garlic clove
  • 1 sprig rosemary
  • 1/2 cup milk
  • 1/3 cup double cream
  • 1-2 Tbs butter, diced
  • 1/3-1/2 cup grated cheese
Methods/steps
  1. Heat milk, cream, diced celeriac, garlic, and rosemary in a pan over a medium heat until the liquid starts boiling.
  2. Reduce heat and simmer until celeriac is tender, about 15 minutes.
  3. Add butter and half the grated cheese to the pan, mix and season to taste.
  4. Transfer to an ovenproof dish and broil until the cheese melts and begins to turn brown. As an alternative, bake for 30 minutes in an oven pre-heated to 400°F (200ºC).
  5. Serve hot.
Additional Tips

Emmental -or Emmentaler- cheeese complements the flavor of celeriac.
