Tomato Marmalade

  • 10 cups peeled, chopped ripe tomatoes, about 5 lb whole tomatoes
  • 2 medium oranges
  • 1 medium lemon
  • 4 2 1/2 -inch cinnamon sticks
  • 1 Tbs whole cloves
  • 5 whole allspice
  • 5 1/2 cups sugar
  • 1 tsp salt
Methods/steps
  1. Drain the tomato, and slice the oranges and lemon very thin, quarter and remove any seeds. Using a cheese cloth, tie up the spices. Mix the tomatoes with sugar and salt in an 8 qt saucepan, stirring well. Then add the spice bag and the orange and lemon slices. Bring to a boil, stirring only occasionally. Cook for 45 minutes. Skim off any foam.
