1 cup wholemeal flour
½ cup brown sugar
2 mashed bananas
1 cup grated carrots
175 ml sunflower oil
2 Tbs raisins
1 tsp ground mixed spice
2 tsp baking powder
For the icing
½ cup confectioner’s sugar for icing
grated rind and juice of 1 orange
Methods/steps
Preheat oven to 350°F (180ºC).
Place all the ingredients for the cake in a bowl and mix until smooth.
Turn into a 7-inch round prepared cake pan. Smooth the surface.
Bake in the middle rack for 60-75 minutes.
Prepare the icing once the cake has cooled. Mix confectioner’s sugar, orange zest and juice until smooth. Spread over the top.
