Carrot, Celery and Onion Casserole

Description

Substitute butter with 2 Tbs vegetable oil for a strict vegetarian diet.

  • 1 medium sized onion, thinly sliced
  • ½ lb carrots, peeled and thinly sliced
  • ½ large head of celery, trimmed and sliced
  • 2 Tbs butter
  • salt and pepper
Methods/steps
  1. Melt butter in a frying pan, add onion and cook for 4-5 minutes. Incorporate carrots and cook for a further 3-4 minutes before finally adding the celery.
  2. Cover and cook over moderate heat for 25 minutes, or until vegetables are tender, stirring occasionally to prevent sticking. Add a little water if necessary.
  3. Season with salt and pepper to your taste and serve.
Additional Tips

Serve this carrot, celery and onion casserole on the side of some fried tofu slices.

This vegetable dish goes equally well with meat, chicken, fish or ham.
