Fish Fillets a la Belle Menuniere

Description

This the classic way to cook white flat fish: in fillets cooked in butter with lemon and parsley. Simple and flavorful.

  • 2 flat fish fillets
  • flour
  • 1 Tbs butter
  • ½ lemon
  • 4 tsp finely chopped fresh parsley
Methods/steps
  1. Take the fish fillets, season them lightly with and flour them.
  2. Melt the butter on a heavy pan on a medium to high heat, until it starts to bubble but not brown.
  3. Add the fish fillets and cook for 5-6 minutes. Turn over, baste and cook for a further 2-3 minutes.
  4. Squeeze in the lemon and sprinkle the chopped parsley on top.
Additional Tips

This method is good for sole -lemon sole, Dover sole- plaice and other flat fish or white fish fillets.
