Description

This spicy okra can also be served stuffed into Indian bread.

  • 1 lb fresh okra, washed and trimmed
  • 4 tbs olive oil
  • 1/4 tsp cumin seed, slightly roasted
  • 1 tbs grated fresh ginger
  • 2 dried red chilies
  • 1 tsp turmeric
  • 1/2 cup yogurt
  • curry leaves
  • salt to taste
Methods/steps
1 Heat the oil over moderate in a heavy pan. Add cumin and ginger. Fry for 1 minute. Add okra and chilies. Cook for 5-6 minutes, stirring frequently.
2 Lower the heat. Add turmeric and yogurt. Stir to mix well. Cover and cook for 10-15 minutes.
3 Add the curry leaves and cook for a further 5 minutes. Serve warm, with rice.

Cooking time: 25 minutes

Cooking Tips
