Cranberry Bread

This is the bread in the winning recipe for our winter 2007 competition.

1 loaf
  • 3 cups plain flour
  • 1 tsp salt, level
  • 1 Tbs butter
  • 1 Tbs sugar
  • 3/4 cup cried cranberries
  • 2 cakes fresh yeast (1 oz) or 1 1/2 Tbs active dry yeast
  • 1/2 cup lukewarm water
  • 1/2 cup lukewarm milk
Methods/steps
  1. Sift flour and salt into a bowl. Rub in butter. Add the cranberries and mix loosely.
  2. Mix the yeast with a little warm water until it turns smooth, creamy and frothy. Add the rest of the warm water and milk. Add this mixture immediately to the dry ingredients.
  3. Mix until you get a firm dough, adding a little flour if necessary. The dough should leave the sides of the bowl clean.
  4. Place the dough onto a lightly floured surface. Knead for 10 minutes, or until smooth and elastic.
  5. Shape the dough to fit a loaf pan. Brush the sides of the pan with melted butter and put in dough. Cover and leave to rise until the dough reaches the top.
  6. Preheat oven to 425°F. Place the loaf pan on the center rack and bake for 50-60 minutes.
  7. Turn out the loaf on to a wire rack and leave until cold before cutting.
