- 2 tablespoons fresh lime juice
- 2 tablespoons fresh lemon juice
- 2 tablespoons rice wine vinegar
- 2 tablespoons creamy style peanut butter
- 1 tablespoon sesame oil
- 1 garlic clove, minced
- 1 teaspoon grated fresh ginger
- 1 tablespoon sugar
- ¼ teaspoon crushed red pepper
- ¼ cup chopped dry roasted peanuts
- ¼ cup chopped cilantro
- 1 pound button mushrooms, halved
Methods/steps
- In a small saucepan, combine lime juice, lemon juice, vinegar, peanut butter, sesame oil, garlic, ginger, sugar, and red pepper.
- Cook over medium heat, stirring constantly, until mixture is smooth.
- Remove from heat; stir in peanuts and cilantro. Place mushrooms in a large bowl and pour peanut mixture over top, tossing to evenly coat.
- Serve alone or over steamed rice, noodles, or let cool slightly and serve over chopped lettuce.
