  • 2 tablespoons fresh lime juice
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons creamy style peanut butter
  • 1 tablespoon sesame oil
  • 1 garlic clove, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon sugar
  • ¼ teaspoon crushed red pepper
  • ¼ cup chopped dry roasted peanuts
  • ¼ cup chopped cilantro
  • 1 pound button mushrooms, halved
Methods/steps
  1. In a small saucepan, combine lime juice, lemon juice, vinegar, peanut butter, sesame oil, garlic, ginger, sugar, and red pepper.
  2. Cook over medium heat, stirring constantly, until mixture is smooth.
  3. Remove from heat; stir in peanuts and cilantro. Place mushrooms in a large bowl and pour peanut mixture over top, tossing to evenly coat.
  4. Serve alone or over steamed rice, noodles, or let cool slightly and serve over chopped lettuce.
