Candied sweet potatoes

- 1 ½ pounds sweet potatoes, sliced
- 3 tbsp butter
- 1 tbsp lime juice
- 1/3 cup packed dark brown sugar
- 1 tbsp brandy
- grated rind of 1 lime
- lime wedges to serve
Methods/steps
- In a large saucepan, cook the sweet potatoes in boiling water for 5 minutes. Remove with a perforated spoon and allow to drain.
- Using a large heavy bottom frying pan, melt the butter. Add the lime juice and brown sugar. Heat to dissolve the sugar.
- Stir the potatoes and brandy into sugar mix. Cooking over a low heat for about 10 minutes until the potato slices are throughly cooked
- Sprinkle the lime rind over the top of the sweet potatoes, mixing well.
- Place on your serving plate, garnish with the lime wedges and serve.
